Vegan Zucchini Bread Cookies with Chocolate Chips and Raisins

I was looking for a way to make a vegan zucchini cookie.  These are a modification on how I usually make zucchini bread.  They have a cake like texture but hold together like a cookie.  And they are yummy!

They’re zucchini bread cookies!

Preheat the oven to 350.

Mix all of the following ingredients:
1 cup pureed zucchini
2 cups flour
1 cup brown sugar
1/2 cup vegetable oil
1 tsp. baking soda
1 tsp. baking powder
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg

Once you’ve mixed the above ingredients, you can optionally add in raisins and/or chocolate chips.  If you’re adding chocolate chips, make sure to buy the dairy free kind if you want to keep these vegan.  I like the Enjoy Life brand.

We used about 1 cup raisins and 1 cup chocolate chips.

Bake for about 12 minutes on a very lightly floured cookie sheet or a cookie sheet covered with parchment paper.  Makes about 1 to 2 dozen depending on the size of your spoonfuls!
