Taco Night!

We’re big fans of taco night. We usually eat tacos once or twice per week. My husband would eat them every night, but I don’t love them THAT much!

I got a free coupon for Hormel Taco meat in my Cheers Vox Box. We usually use ground beef for our tacos, but I decided to try something different and get the pork with the coupon.


This was a really quick weeknight dinner for us. I chopped some roma tomato and used lettuce from our Aerogarden.


The meat could be heated on the stovetop or in the microwave. I chose microwave to make things quick. It just needed a minute and a half to cook. We made guacamole and dinner was ready! #TacoGoals

  1. Those look so good!!! My oldest is open to just about anything but my middle is so dang picky. He refuses to eat a tortilla. Who doesn’t like tortillas? One day I’m sure he will but for now he would totally eat the meat, he’s a big meat eater. Great post!

  2. table would be nice .re fried beans How about mini quesadillas a ciltanro corn salad is light and refreshing also and would go nice. I have enclosed a recipe for it. I can see why you are stuck:)Good luck and congrats!!!This serves about 6-8 peeps 10 ears fresh corn, husked 2 pounds plum tomatoes, cut into 1/2-inch cubes 3/4 cup finely chopped red onion 1/2 cup chopped fresh ciltanro 1/4 cup extra-virgin olive oil 1 tablespoon red wine vinegarCook corn in large pot with boiling salted water until just tender, about 5 minutes. Drain; cool to room temperature. Cut corn kernels from cobs. Transfer corn to large bowl. Add remaining ingredients; toss to blend. Season salad to taste with salt and pepper. (I don’t make mine more then 12-24 hours in advance)
