With Memorial Day coming, I wanted to make a cool treat for the kids. These patriotic fruit bars are dairy free with no sugar added!
For the red, we used strawberry and raspberry. For the blue, we used blueberry. For the white we used chilled coconut milk. It’s important to use the canned kind. And just use the thick stuff, don’t mix it up!
Our popsicle molds came from Ikea, but they are also sold on Amazon.
I chopped up the fruits in my mini chopper. I used about half a pint of the blueberries and raspberries and about 6 large strawberries. That was enough to fill 6 Popsicle molds without much waste.
I started with raspberry on bottom. Then, I added a thin layer of coconut milk to keep the fruits from mixing.
I added the blueberry third and the strawberry on top.
They were frozen in about 2 hours!
