The Best Gluten Free Zucchini Banana Bread

In the summer, we’re usually drowning in zucchini from the garden. I love to make zucchini cookies and breads. Here’s a gluten free version of our summer favorite! I hope you enjoy this Gluten Free Zucchini Banana Bread!

Makes 1 9×9 loaf pan

Gluten Free Zucchini Bread Ingredients

1 large banana, mashed
1/4 C organic honey
4 tbsp olive oil
2 large brown eggs
1 1/4 C shredded zucchini
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 1/2 C 1 to 1 gluten free baking flour
3/4 C almond meal
1/2 C chopped walnuts plus some for on top (optional)

Gluten Free Zucchini Bread Instructions

Step 1: Preheat oven to 325 degrees. Grease the loaf pan and set aside.

Step 2: In a medium bowl, mash the banana. Then combine with the wet ingrediants: honey, olive oil, eggs, and zucchini.

Step 3: In another bowl, combine dry ingredients: the baking powder, baking soda, salt, flour, and almond meal. Mix until combined.

Step 4: Gradually add the dry ingredient mixture to the wet ingredient mixture. Mix until smooth and combined. Mix in the chopped walnuts. (optional)

Step 5: Pour the batter into loaf pan and sprinkle walnuts on top

Bake in the oven for 60 minutes

Check the center with a tooth pick to see if the loaf is done.

Once baked let cool completely before enjoying!

    I keep wanting try a baked good with zucchini but have a new bag of coconut flour!!

  3. That looks like a great recipe. I’ve been doing a fair bit of gluten-free cooking and always looking for more recipes. I hate the ones that have at least 3 different flours to use. That’s just too much. This is one is simple.
