To start, we prepared the marinade and let the salmon soak it up!
The recipe calls for cooking on the grill, but we actually cooked it in a skillet due to snowy weather!
The dressing is made with olive oil, lime juice, honey, coriander, salt and pepper – yum!
It plated up beautifully and was a hit with the whole family! The European Extra Virgin Olive Oil gave it such a rich flavor and was a great complement to the marinade.

I just started cooking with EVO. It seems to make food taste better. Love putting it on my meat as well.
EVOO is our main oil, and I can only imagine that this kind would have explosively good flavor! I’ve noticed the really upscale brands are unbelievably good! Almost floral or something. Hard to explain. They are just amazing!

The recipe sounds like it is delicious. I like my salmon to have a golden brown hue so I would probably pan sear it and then do the glaze.
I love the good flavor that can be found in a good olive oil. It is worth the little bit of extra cost.
MMM now you have me hungry for our next date-night in! (hubs and I love salmon, the girls not so much). EVOO is pretty much ALL we cook with, except a little butter for frying eggs in the morning 🙂 – there’s nothing like it!
