These mini southwest egg rolls are made with won ton wrappers. The cheese is optional and can be omitted for a vegan option.
Mini Southwest Egg Rolls filling ingredients
1/2 cup rice (pre-cooked)
1 chicken breast (pre-cooked and diced)
1 ear of corn (pre-cooked and removed from cob)
1 red pepper (chopped)
1 cup of chopped spinach
1 can black beans
1 Tbsp chives
1/2 tsp chili powder
1/4 tsp cayenne pepper
2 cups of Colby jack cheese (optional)
You also need one package of won ton wrappers (approx. 40) and oil for frying.
Mini Southwest Egg Rolls directions
Pre-cook the rice and chicken and prepare all ingredients. Combine all ingredients in a large bowl.
Place a small spoonful of filling on each won ton wrapper. Using your finger, dampen the edges of the wrapper with water before folding. Tightly fold the won ton wrapper so there are no large openings.
Fry in a large pan over medium heat until golden brown on the outside.
Avocado Ranch Dip
To make a really basic avocado ranch dip, you can purchase ranch dressing and jazz it up a bit.
1/2-3/4 cup ranch dressing depending on desired consistency
1/2 tsp lime juice (to help prevent browning)
